BENEFITS OF BIRD'S NEST
What is in edible bird's nest, and who has traditionally enjoyed it, explained simply.
KEY NUTRIENT
Modern analysis shows that besides being rich in protein and amino acids, bird's nest is especially rich in sialic acid and epidermal growth factor. Sialic acid is its most valued component.
Sialic acid is a family of neuraminic acid derivatives found widely in nature. Many foods contain a little, but bird's nest contains up to about 10%, which is why it is also called "bird's nest acid".
A child's brain develops quickly while the liver, where the body makes sialic acid, matures slowly. Nutritionists note that women preparing for pregnancy, expecting or breastfeeding often include bird's nest in their diet for this reason.
